The Coldstream Guard is a proud salute to the Yarra Valley as an internationally recognised, cool climate, winemaking region. This Cabernet Sauvignon is an expression of the cool-climate Yarra Valley and the beneficiary of the classic Levantine Hill philosophy, methodology and sylistic approach.
Tasting Notes
Colour: Clear red with mahogany rims.
Nose: This cool-climate expression of Cabernet Sauvignon features enticing and unfurling aromas of plum, currant, cranberry, sarsaparilla, nutmeg, sandalwood and dusty cedar oak.
Palate: The fresh lively juicy palate evokes flavours of Christmas cake, blueberry, cinnamon, clove, baked fig Tarte Tatin and dark chocolate. An understated acidity enmeshes with slow-building finely-honed talc-like tannins for a velutinous texture, length of palate and subtle reverberance of flavour. Goes well with red and white meats, stews, churrasco, small game, fatty fish, rice and pasta as well as seasoned and semi-cured cheeses.
Grape Varieties: 100% Cabernet Sauvignon
History of Levantine Hill
Levantine Hill is rated 5 red stars by James Halliday (Australian wine critic). Even more impressively, Huon Hooke rates them the 30th best winery in the country, ahead of Penfolds, Yangarra, Woodlands, Shaw, and Smith, Torbreck.
Levantine has superb vineyards and growers and a brilliant winemaker in Paul Bridgemen who was formerly the winemaker for Yarra Yering. Levantine’s lofty ambitions are well encapsulated by the following quote “We hope this estate will transcend man’s inevitable mortality and brief custodianship of all things material.
Fortunately, the proof is in the bottle as confirmed by Jeremy Oliver who says “Levantine Hill produces wines of European elegance and subtlety and its quality aspirations are frankly inspiring.
