Absis takes its name from the stones that make up the apse of Romanesque churches, which, like it, endure over time, impassive and beautiful. Absis is a complex wine, with strong tannins, high alcohol content and great acidity. The quality required for it to improve with time and to develop another dimension due to its tertiary aromas which the barrel has given it.
Tasting Notes
Colour: Purple colour with cherry rim, high intensity black colour.
Nose: Great concentration and complexity in aroma, with candied notes of red fruits, sultanas, plums, blackberries… perfectly blended with the wood and the presence of balsamic notes.
Palate: Great power and concentration, being full and ample. Absis can be paired with matured meats and grilled vegetables. Recommended serving temperature between 16 and 18°C.
Grape Varieties: 59% Tempranillo, 19% Cabernet Sauvignon, 10% Merlot and 12% Syrah
Ageing: Aged in new French oak barrels (Allier) for 18 months.
History of Pares Balta
Parés Baltà has always been a small family winery linked from its origins since 1790 to viticulture and agriculture, in which all its members are involved (Cusiné family). Along with tradition and quality, the environmentally friendly cultivation of vineyards is one of the main hallmarks of Parés Baltà.
They work their vineyards in Penedés, Spain, with biodynamic viticulture, a type of agriculture that goes one step beyond ecological: They promote biodiversity, they use plants that heal plants, and create the perfect conditions for nature to decide at all times. All of the wines are certified organic and biodynamic vineyards (Demeter).
