Parés Baltà ’s Brut cava is a blend of the three traditional varieties of the Penedès: Parellada, Macabeu and Xarel·lo. The parellada, from the highest mountains of the region, provides the freshness, the macabeu gives us the fruit and the xarel·lo gives us the body.
The three varieties complement each other creating a perfect synergy of aromas and freshness.
Tasting Notes
Colour: Pale yellow colour with bright yellow reflections.
Nose: Aroma of medium intensity, with notes of pastries combined with white fruits (pear, apple) and floral hints.
Palate: Fresh and lively on the palate, where fruity notes dominate. Light and smooth, with a pleasant finish. Ideal for drinking by the glass. A perfect accompaniment to appetizers and desserts. Recommended serving temperature between 6 and 8°C.
Grape Varieties: 62% parellada, 24% macabeo and 14% xarel·lo
Ageing: Aged in new and second year French oak barrels for only 2 months so as not to add too much wood and to maintain its characteristic fruity touch.

History of Pares Balta
Parés Baltà has always been a small family winery linked from its origins since 1790 to viticulture and agriculture, in which all its members are involved (Cusiné family). Along with tradition and quality, the environmentally friendly cultivation of vineyards is one of the main hallmarks of Parés Baltà .
They work their vineyards in Penedés, Spain, with biodynamic viticulture, a type of agriculture that goes one step beyond ecological: They promote biodiversity, they use plants that heal plants, and create the perfect conditions for nature to decide at all times. All of the wines are certified organic and biodynamic vineyards (Demeter).
