Fine De Claire Oysters from France
The Fine de Claire is a well-known French oyster that has undergone its last ‘affinage’ in the ‘claires’. These claires, which are connected to the open sea, are shallow closable ponds in the past used mainly for the production of salt. Thanks to the affinage in the claires, these oysters have a stronger, slightly sweeter taste.

Originally from Japan, this oyster is now the most important commercial species in the world, making up about 97% of the global oyster production. The Pacific oyster features a black, velvety mantle on the edge of its meat. Pacific oysters have lots of sweet and creamy notes, with a touch of earthiness.
