Tasting Notes
Colour: Soft and delicate violet-red
Nose: Maritime saline, defined as wakame/miso, blackcurrant, sage, bouquet garni, anise and tomato leaf.
Palate: Red and blue fruits infused with licorice and spice. A rare-ish Vale cabernet expression with a mineral-led fineness and structure which gives rise to cool lines and super-long finish. Indeed, this could be mistaken for a cool climate super spiced-up cabernet with bare traces of oak. And the finish goes and goes.
Grape Varieties: 100% Cabernet Sauvignon
Ageing: 13 days on skins & 20 months in 100% tight grained French oak

History of Chapel Hill Winery
Located in South Australia’s McLaren Vale, Chapel Hill Winery was established in 1973 by Tom Nelson and takes its name from a historic ironstone chapel built in 1865. Under the guidance of winemakers Michael Fragos and Bryn Richards, Chapel Hill strives to hand craft wines with purity and balance. To pursue this belief of “sense of place”, all of the grapes and wines are handled gently in small batches with a sensitive winemaking philosophy.
