Tasting Notes
Colour: Purplish red
Nose: A little oak, a regional cocoa note, plus a brambly dried mint and sage character are to be found, also.
Palate: The Parson GSM provides a gateway to these quintessential McLaren Vale varieties with a focus on bright fruit flavours and a breezy texture. The soft and savoury red berries of grenache, the strength, spice and dark berries of shiraz and the tang and meatiness of mouvedre are skilfully blended in this flowing, layered GSM with persistent fine grained tannins. This would be perfect with rustic dishes such as ragu.

History of Chapel Hill Winery
Located in South Australia’s McLaren Vale, Chapel Hill Winery was established in 1973 by Tom Nelson and takes its name from a historic ironstone chapel built in 1865. Under the guidance of winemakers Michael Fragos and Bryn Richards, Chapel Hill strives to hand craft wines with purity and balance. To pursue this belief of “sense of place”, all of the grapes and wines are handled gently in small batches with a sensitive winemaking philosophy.
