Colour: Dark ruby
Nose: Ripe fruit poking its way through the mineral-dominated nose.. hints of smoke and earth.
Palate: 1996 Canon is a lean, austere, delicate wine with medium body, but little intensity or length. Angular and compressed, it is likely to dry out over the next decade. Anticipated maturity: 2002-2015.
Grape Varieties: 55% Merlot & 45% Cabernet Franc

History of Chateau Canon
Jacques Kanon purchased the vineyard in 1760. He earned his fortune as a privateer and was closely associated with Quebec. However he sold the estate about a decade later to the Fontemoing family, who held it until 1857. The estate was only officially named Château Canon in 1853.
Canon was purchased by fashion giant Chanel in 1996, and the company set about renovating the cellars and vineyards with the aim of modernizing the brand. Much of the Cabernet Sauvignon was ripped out in favor of Merlot and Cabernet Franc, which were more suited to the limestone and clay soils.
