The Small parcel of fruit was selected and harvested from our 35 year old Shiraz Block, when it reached the right balance between flavour and acidity.
Fermentation was carried out in an open-top fermentater with extra care. This not only creates intensity of the dark fruit and spice characters it is expected to reach an outstanding elegance and fineness over 5 to 10 years.”
Tasting Notes
Colour: Medium purple-red
Nose: Full of ripe black fruit, olives and has an abundance of oak.
Palate: The Shiraz shows flavours of blackberries, pepper and spices, creamy and smooth on the palate. Pairs well with Beef.
Aging: Aged in French barrels for 18 months in 20 % new and 80% old barrels.
