Here the winemakers of Dominio Romano searched for the expression of the freshness of the grape that proceeds from a strict selection of vineyards between 15 and 30 years. The elaboration is to extract the maximum aromatic potential of the grape while preserving a balanced and mild wine to be enjoyed in any occasion. For that a modern technique is used, known as “cold soaking”, which the winery has been improving constantly until achieving maximum benefits: A good extraction of color and aroma with a low input of tannins.
Tasting Notes
Colour: Deep red-purple color.
Nose: The wine presents intense fruity aromas that remind of red and black fruit confiture.
Palate: On the palate the wine behaves elegant with a good acidity that gives great balance. The fruity character is combined with a gentle touch of oak and a very fresh and clean finish. Goes well with grilled poultry and vegetables. Ideal serving temperature: 15 – 16ºC.
Grape Varieties: 100% Tempranillo
Ageing: Aged for 8 months in 400l French and Hungarian barrels, 2nd and 3rd fill.

History of Dominio Romano
Dominio Romano was established in 2005 when the owners of Parés Baltà and Gratavinum – the Cusiné family – decided to initiate a project in Ribera del Duero, Spain.
Selecting the finest old and wild Tinto Fino vines in the best terroirs of the region, and farming with the utmost respect for the environment and tradition, worked and certified biodynamically, the Cusiné family produces wines that transmit the character of the autochthonous grape.
