Tasting Notes: Typical notes of star anise and spice. Subtle salty finish. One of the very few wines able to reveal asparagus flavours.
Grape Varieties: Chardonnay
Les Beauroys bloom on Kimmeridgian limestone foothill and give Chablis’s minerality to the wine but also a typical richness which makes it a great wine.
The ripening was slow and fully achieved, without any over-concentration. Skins were pale yellow thanks to a ripeness without excess. The juice has a remarkable balance, with nice acidity, this vintage has a great potential. It is quite similar to 1996 in the remarkable acid structure and shows some characteristics of 2010 and 2008, with a still more beautiful balance.
Hand harvest and sorting at the winery. Fermentation in oak casks and stainless steel tanks. Ageing on fine lees in the same casks and tanks.
