Vieille Voye is located beneath Premier Cru Les Vaillons on a rounded top with wide exposure. This wine is made just like a Premier Cru: hand-made harvest, grape sorting in the winery and long ageing in French oak “foudre”. This plot lies over 7 ha, all in once. A vineyard with all the characteristics of a great terroir of Chablis: sunny exposure, Kimmeridgian limestone soil and 70 year-old vines. Ripeness can be achieved without losing the typical salty character of the terroir.
A mild winter was followed by a cold and rainy spring with some spring frost and hailstone showers on some parts of the appellation. August was warm and dry which favoured the so far belated ripening and accelerated the maturation process. The ideal September weather conditions with mild showers and a nice sunshine finally enabled to ensure a nice maturation of the grapes.
